No better way to unwind after a busy weekend than to cook up some yummy grub for yourself! For those of you who have been around for a little while, it’s not new information that I totally adore Sundays. As a busy student-athlete, Sunday is my designated day to get prepared for the week. Working ahead on homework or studying, going grocery shopping so my fridge & pantry are stocked, and always trying to squeeze in some alone time to either read, write or watch Scandal – the whole nine yards here. (BTW you gotta watch Scandal if you haven’t yet, I’m so hooked).
Not only do I use Sundays to get my mind right, I also use them to get my body right too. If I splurge and eat a load of junk on Sundays, it sets a bad tone for the entire week. I wake up bloated on Monday morning, I feel heavy, and I’m not comfortable in my body at all. My absolute least favorite feeling is when I’m not comfortable in my skin, which is reason number one why I am so invested in living a healthy lifestyle. Eating well on Sundays builds a base on which I can climb even higher throughout the week.
That being said, I wanted to share a Sunday “go-to” for a tasty yet well rounded dinner. It’s easy, delicious and healthy! Literally nothing more you could ask for. I do my best to load up my plate with a good serving of veggies because I find they keep me full longer and I’ll be less inclined to run to Culver’s at 9pm when my stomach starts to poke at me again (sweet tooth is the devil on my shoulder). Roasted vegetables are the MVP of easy – some olive oil, salt & pepper, pop em in the oven and then sit back & relax until they are ready.
I’d have to say that salmon is definitely one of my favorite foods, but I haven’t made a habit of eating it at home until recently. I never knew how easy it is to cook! Been on a massive sweet potato kick the past couple of months too – I try to not let myself run out so I can always fall back on them when I’m too lazy to cook something more complicated haha.
Ya know the roasted veggies I mentioned earlier? Exhibit A right here! Sweet potatoes: diced w/ olive oil, s&p and roasted at 400 degrees for 25-30 minutes. The time can be adjusted for personal preference – soft vs crispy. Asparagus: trim the ends, sprinkle w/ olive oil & parmesan and roast at 400 for 10-15 minutes (same time adjustment applies). Salmon: baked also at 400 degrees for 15-18 minutes, till it is pink and flakey (cue drool). I attempted to throw a balsamic glaze together of balsamic vinegar, olive oil, minced garlic and a little bit of honey. I layered it on the salmon before I put it in the oven, but I find that salmon honestly doesn’t need a glaze or any sort of sauce on it. It’s packed with flavor and goodness all on it’s own!
There ya have it people! Simple and YUM. A little bit of a road bump tonight when a piece of cheese from a frozen pizza started on fire in the oven while I was roasting the vegetables, but ya girl figured it out. Still only took me 30-40 minutes! PLUS my boyfriend approved of the meal, so you know it’s legit.
